okay, a first for me, posting a recipe, but this was so good + spontaneous...recently, again, a vegetarian, this dish fulfills that meaty richness...so...an eggplant...chopped into cubes, sauteed in olive oil...add a chopped yellow pepper, chopped onions, 2, 4 cloves of chopped organic garlic, half a jar of pureed Italian tomatoes, can of Italian tomatoes, 2 cups shitake mushrooms, chopped, handful of parsely, chopped....everything stews, gently...add some dried marjoram, a couple of anchovies (this gives it richrichrichness), chopped calamari olives -- I didn't have any so I added a big table spoon of olive tapenade I had in fridge...some dried thyme, TONS of pepper, pinch of salt...stew for 10-15 minutes (until the penne is done) throw the penne into the sauce..last thing a big handful of fresh basil..serve....add some freshly grated parmesan cheese, more freshly ground pepper + oohlala...Oh, + what I didn't add. This recipe has so many cancer fighting ingredients it's not even funny...the tomatoes, the mushrooms, the garlic, the onions, the black pepper, the red pepper, the herbs..all big primo ingredients.
